A light and flavorful pasta dish with fresh vegetables, garlic, olive oil, and Parmesan cheese. Quick to prepare and perfect for weeknight dinners.
Ingredients
- 12 oz (340 g) spaghetti or penne pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
Steps
- Cook pasta in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil and sauté garlic until fragrant.
- Add vegetables and cook until tender but crisp, about 5–7 minutes.
- Toss in cooked pasta, season with salt, pepper, and red pepper flakes.
- Sprinkle with Parmesan cheese and garnish with fresh basil before serving.
